      <image:caption>How do you cool down in the middle of summer in Florida without spending every last cent in your bank and then some? Build a stock tank, of course! When we first had this idea, we had to think of all the pros and cons. How will we clean it? Will we be okay with a pool that’s only two feet deep? Will it be cost-effective to maintain? Will we like this for the new baby in the house? With the rising trend of the DIY stock tank pool, we decided to give it a go.</image:caption>

      <image:title>Blog - DIY Stock Tank Pool with Peroxide - Benefits of a Stock Tank Pool</image:title>
      <image:caption>When it comes to regular pools, the typical choice is between saltwater or chlorine, with chlorine being the preferred option for most individuals. We knew saltwater was out of the question because it would rust the steel and it is way too expensive to maintain. While chlorine is so common in almost every pool and there is nothing wrong with chlorine, but we knew it would rust quicker than the saltwater, so we kept researching. Then we came across food-grade peroxide as an alternative worth considering. Upon researching the peroxide pools, we actually found out that cancer centers use them for cancer patient treatments. The food-grade peroxide has been a great option for us financially and very easy to use. Also, not harsh on our skin.</image:caption>

      <image:title>Blog - Rehydrating ‘Violet’ - Feed.</image:title>
      <image:caption>After you have waited the 2-4 hours you want to give this girl a feed. Add 15g of flour (I use King Aurthur all purpose) into the jar and give it a good mix. Make sure there is no flour showing or not mixed in. This is where a spatula comes in and you are able to scrape the sides to make sure you have an even mix. It should have a pancake batter consistency.</image:caption>

      <image:title>Blog - Rehydrating ‘Violet’ - Feed again.</image:title>
      <image:caption>You might see a slight change in the starter with bubbles here and there. Without discarding any starter, add another 15g of water and 15g of water.</image:caption>
    </image:image>
    <image:image>
      <image:loc>https://images.squarespace-cdn.com/content/v1/6847028b2fd53c29e99051c2/ef9c4994-1a95-4100-9edb-035fd6f72825/D3.jpeg</image:loc>
      <image:title>Blog - Rehydrating ‘Violet’</image:title>
      <image:caption>Stir and wait. Ideally, sourdough needs to be in temperatures of 70-80°F to perform at its best. You’ll want to wait until the starter is completely dissolved, or about 2-4 hours. It is okay if there are bits that did not dissolve all the way.</image:caption>
    </image:image>

      <image:loc>https://images.squarespace-cdn.com/content/v1/6847028b2fd53c29e99051c2/69ab4d51-b487-45cb-aae6-de3d3e17a500/D2.jpeg</image:loc>
      <image:title>Blog - Rehydrating ‘Violet’ - Hydrate and wait.</image:title>
      <image:caption>You’ll want to start out with an 8oz mason jar for the first few days. Add your 6g of dehydrated sourdough to the mason jar and add warm water (About 15g or so) just enough to cover the starter. Place the lid loosely on top. Do not screw on or tighten the lid.</image:caption>
    </image:image>
    <image:image>

      <image:title>Blog - Rehydrating ‘Violet’ - First discard.</image:title>
      <image:caption>By now, you should notice a more visual change. The starter should have risen a little bit and more bubbles might appear. You’ll want to discard all but 15g of your starter. This is where your kitchen scale will come in handy. Add 30g of flour and 30g of water to your 15g of starter.</image:caption>

      <image:title>Blog - Rehydrating ‘Violet’ - At this point, your starter should be active. Doubled in size, and bubbly. It should have a sweet smell, with a tad bit of sourness. I recommend a good 6-8 hours for a peak rise time. In the AM, do a feed with a 1:1:1 or 1:2:2 ratio depending on what you plan to bake.</image:title>
